Coffee Recipe - Tellervo
Notes:
- brew the coffee as per directions. Strain, and set out 1 tsp of the grounds (dry them out)
- melt oils and butters
- let the oils cool
- once coffee is frozen, add lye to it, and stir until it's dissolved
- back to the oils: add 2.5 tsp cocoa powder to the oils, and blend with an immersion blender
- in a separate container, add 2.5 tbsp distilled water, 15g citric acid, and 1 tsp syrup (or honey). Mix this until all is dissolved. Set aside for later.
- When oils and lye ar around 90(ish) degrees, add the lye solution to the oils, and mix with a spatula.
- add the additives, and mix more with a spatula
- use immersion blender to bring to emulsion
- add 1.25 tsp coffee grounds, and mix in with a spatula
- pour
- If you want it to gel, you can keep it warm (oven process)
