High Oleic Sunflower Oil

I am wanting to double check the info for high oleic sunflower oil before I start my batch. I don't understand why the longevity would be lower (7) for the high oleic version than what's listed for regular sunflower oil (11). Thought I'd confirm since it seems a little backwards; just in case it's an error that should be swapped. Thanks ! 😘

the more oleic acid, the faster the oxidation rate (oils go rancid rate) = decrease in longevity. I'd recommend you add an anti-oxidant at the end. saturated fats, such as many butters have, have a longer shelf life as they don't oxidize (go rancid) as fast.

Most soft oils have unsaturated bonds, so have shorter shelf life. Think crisco (super saturate) 2+ years vs rosehip seed oil (unsat) 6 month shelf life
